Bright, tangy, and buttery, this Chicken Piccata is a restaurant-quality dish made right at home. Thin-sliced chicken breasts are lightly coated in Parmesan and pan-seared until golden, then simmered in a zesty lemon, white wine, and caper sauce. It’s simple enough for a weeknight dinner yet elegant enough to serve for guests.

INGREDIENTS

2 lbs thin-sliced chicken breasts (or chicken tenders)
1/2 cup all-purpose flour
1/2 cup grated parmesan cheese
2 tsp salt
2 tsp lemon pepper seasoning
1 tsp ground pepper
2 tbsp unsalted butter
2 tbsp olive oil

SAUCE
1 1/2 cup chicken broth
2/4 cup white wine
1/3 cup lemon juice
1 shallot (minced)
3 garlic cloves (minced)
3 tbsp unsalted butter
3 oz capers (1 jar)
Fresh parsley (for garnish)

DIRECTIONS


STEP 1: Prepare the Chicken
In a shallow dish, combine the flour, Parmesan cheese, salt, lemon pepper seasoning, and ground pepper. Dredge each chicken cutlet in the mixture until evenly coated, then shake off any excess

STEP 2: Sear the Chicken
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook for 3 to 4 minutes per side, until golden brown and cooked through to an internal temperature of 165°F. Transfer the chicken to a plate and keep warm.

STEP 3: Make the Sauce
In the same skillet, reduce the heat to medium and add the minced shallot. Sauté for about a minute until fragrant, then add the minced garlic and cook for another 30 seconds. Deglaze the pan with the white wine, scraping up any browned bits from the bottom, and let it simmer for 1 to 2 minutes until slightly reduced. Pour in the chicken broth and lemon juice, then let the sauce simmer for 3 to 4 minutes until it begins to thicken. Stir in the capers and 3 tablespoons of butter, whisking until the sauce becomes smooth and glossy.

STEP 4: Combine and Serve
