Fresh, homemade pasta made with just five simple ingredients! This easy recipe uses a stand mixer and pasta attachments to create delicious, tender noodles from scratch.

INGREDIENTS

2 1/2 cups (approximately 300 g) flour, preferably Italian "00" flour
4 large eggs
1 tbsp olive oil
1 tsp fine sea salt
Water (as needed)
Extra flour (for dusting)

DIRECTIONS

STEP 1 - Make the Dough
Add the flour, eggs, olive oil, and salt to the bowl of a stand mixer. Using the dough hook attachment, mix on low speed until the ingredients come together into a shaggy dough.

STEP 2 - Knead the Dough
Transfer the dough to a lightly floured surface and knead by hand for 5–8 minutes, until smooth and elastic. If the dough feels too dry, add a little water, a teaspoon at a time. If it's too sticky, sprinkle with additional flour.

STEP 3 - Let the Dough Rest
Shape the dough into a ball and wrap tightly in plastic wrap or cover with an airtight bowl. Let rest at room temperature for 30 minutes to allow the gluten to relax, making the dough easier to roll.

STEP 4 - Divide the Dough
Attach the pasta roller to your stand mixer. Divide the rested dough into 4–5 equal pieces, keeping any pieces you're not working with covered to prevent drying. Flatten one piece with your hands and lightly dust both sides with flour.

STEP 5 - Roll Out the Pasta
Set the pasta roller to its widest setting (usually #1) and feed the dough through. Fold the dough into thirds, flatten slightly, and pass it through again. Repeat 3–4 times, until the dough is smooth and even.

STEP 7 - Adjust the Thickness
Gradually decrease the roller thickness by one setting at a time, passing the dough through each setting until you reach your desired thickness. For spaghetti or fettuccine, setting #5 or #6 is usually a good stopping point. Lightly dust with flour as needed to prevent sticking.

STEP 8 - Cut the Pasta
Switch to the spaghetti or fettuccine cutter attachment and feed each pasta sheet through to create your noodles. Gently separate the strands and arrange them in loose nests or lay them on a lightly floured surface. Sprinkle with additional flour as needed to prevent sticking. Repeat the rolling and cutting process with the remaining dough.

STEP 9 - Cook the Pasta
Bring a large pot of generously salted water to a boil. Add the fresh pasta and cook for approximately 2–3 minutes, or until tender and al dente. Fresh pasta cooks much faster than dried pasta, so start checking around the 2-minute mark!

STEP 10 - Add Your Favorite Sauce & Enjoy!
Reserve a little pasta water before draining. Toss the fresh pasta with your favorite sauce, adding a splash of reserved pasta water if needed to help everything come together. Serve immediately and enjoy!

TIPS: Tips for Perfect Homemade Pasta
- Use "00" flour: Creates a smooth, silky dough and tender pasta, although all-purpose flour works well too.
- Adjust as needed: Pasta dough should feel firm and smooth, not overly sticky. Add water or flour in small amounts to achieve the right consistency.
- Don't skip the rest: Allowing the dough to rest makes it much easier to roll.
- Keep unused dough covered: Pasta dough dries out quickly when exposed to air.
- Flour as you go: Lightly dust the pasta before rolling and cutting to prevent sticking.
- Watch the cooking time: Fresh pasta cooks quickly! Start checking after 90 seconds to avoid overcooking.
